One-Pot Ramen Alfredo with Broccoli

This is Alfredo in its laziest, tastiest form: ramen noodles simmer straight in a garlicky cream sauce with broccoli until everything’s saucy, silky, and dinner-ready in just ten minutes.

Serves 4

  • 4 Tbsp butter
  • 5–6 cloves garlic, minced
  • 3 cups whole milk, plus more if needed
  • 1 cup heavy cream
  • 3 cups frozen broccoli florets, defrosted
  • 1 tsp salt
  • 1/2  tsp black pepper
  • 4 3-oz (85-g) pkgs ramen noodles (discard seasoning packets)
  • 1 cup grated Parmesan cheese, plus more for serving
  • pinch crushed red pepper (optional)
  • fresh parsley, for garnish (optional)

 

Melt butter in a wide saucepan over medium heat. Add garlic and sauté for 1 minute, until fragrant.

Pour in the milk and heavy cream; bring to a gentle simmer. Stir in the broccoli, salt, and pepper.

Break the ramen blocks in half and add them directly to the pan. Simmer for 3–4 minutes, stirring often, until the noodles soften and the broccoli is heated through. Add a splash more milk if the pan gets too dry.
