Everybody loves beef sliders; they’re small and easy to eat. Why not be original and try these mini stuffed and toasted pitas?

YIELDS 20 MINI HALF PITAS

  • 1 pkg mini pitas, cut in half
  • olive oil spray
  • techina, for serving
Meat Filling
  • 1 lb (½ kg) ground beef
  • ½ lb (¼ kg) ground lamb (optional)
  • 6 oz (170 g) canned crushed tomatoes
  • 5 scallions, chopped
  • 1 cup chopped cilantro
  • 1 egg
  • 2 Tbsp shawarma spice
  • ½ tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • ½ cup pine nuts (optional; toast if desired)

Preheat grill to 500°F (250°C).

In a large bowl, mix all filling ingredients together. Carefully stuff the mini pitas with the meat mixture. Spray pitas with olive oil and place on grill for approximately 4 minutes on each side.

Dip into techina and enjoy.
