SERVES 4 

  • 1 whole chicken, cut in quarters, or 4 chicken bottoms
  • 16 regular baby carrots, stems attached (not the kind in a bag)
  • 12 cloves fermented garlic (from garlic-infused honey)
  • 5 Tbsp garlic-infused honey, divided
  • ½ tsp sea salt, divided
  • ½ tsp course black pepper
  • 1 tsp parsley (optional)
  • ½ tsp paprika Preheat oven to 350°F (175°C).

Place carrots in an oven-to-table glass baking pan. Add garlic cloves and 1 tablespoon of garlic-infused honey. Combine the spices and season the chicken.

Then rub the additional 4 tablespoons of garlicinfused honey on both sides of the chicken pieces. Bake the chicken covered for one hour then raise temp to 425 and uncover the chicken for 45 min or until you reach desired browning.

Tip: If you’d like, you can add 1⁄4 cup of dry white wine to the pan before baking.
