SERVES 4–6

  • 1 box puff pastry dough, defrosted
  • 2–3 Tbsp tomato sauce or marinara sauce
  • ½ cup shredded mozzarella cheese (or more to taste), divided
  • 2–3 Tbsp cottage cheese
  • ¼ cup frozen chopped spinach
Butter Topping
  • 6 Tbsp butter
  • 6–8 cloves garlic, finely chopped
  • 2 Tbsp freshly chopped basil, or 2 frozen cubes basil

Preheat oven to 400°F (200°C). Line a springform pan (or any round pan) with parchment paper and set aside.

Unroll one sheet of puff pastry dough and smear with tomato sauce and sprinkle with shredded cheese. Roll up like a cinnamon bun, then slice into rounds.

Unroll the second sheet of puff pastry and smear with cottage cheese and spinach, then sprinkle with shredded cheese. Roll up and slice into rounds.
