Curried Smoked-Turkey Salad Wraps

Up the ante with smoked-turkey leg in place of chicken for a curried gourmet lunch on the go

Curried    Smoked-Turkey    Salad    Wraps

I’m a big fan of traditional curried chicken salad so I upped the ante here by incorporating ready-made smoked turkey leg. The smokiness is a great counter to the sweetness in this dish. I especially love the low-carb variation!

INGREDIENTS

SERVES 2–4

 

  • 1 smoked turkey drumstick skinned deboned and chopped
  • 1 cup thinly sliced iceberg lettuce
  • ⅔ cup diced Fuji apple (about ½ an apple)
  • ¼ cup finely diced celery
  • 3 Tbsp dried cranberries
  • 2 Tbsp toasted slivered almonds
  • 3 Tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 tsp lemon juice
  • ¼ tsp curry powder
  • kosher salt to taste
  • 2 whole wheat wraps

 

PREPARATION

In a medium-sized mixing bowl combine the turkey lettuce apple celery dried cranberries and almonds. In a small bowl whisk the mayonnaise mustard honey lemon juice curry powder and salt. Pour the dressing over the salad ingredients and stir to combine. Divide the salad between the two wraps and fold up to close.

Variation Try a low-carb version by omitting the sliced lettuce and serving the salad in lettuce cups instead of wraps.
