EASY MINI BURGERS
Preheat your grill or grill pan. Mix all the ingredients in a bowl (it’s easiest to mix by hand). Form mini burger patties. Place on the grill for about 2-3 minutes per side, depending on the size and your preferred level of doneness. For a baked version: Preheat your oven to 375°F (190°C).
Place patties on a greased baking sheet, and spray the tops with oil. Bake until golden and crispy, about 15-20 minutes.
To make this into a delicious macro meal, start with a round slice of grilled or roasted sweet potato. Top with a bit of lettuce, a thin round slice of tomato, and the mini burger. Garnish with a dollop of guacamole or dip of your choice. If you want to complete the sandwich, cover with another sweet potato slice. If that isn’t a way to take a bite out of summer…
