Make these super-fancy-yet-easy-to-make cheesecake fruit squares with store-bought puff pastry topped with a homemade cheesecake layer and some sliced fruit. The tahini-lime drizzle adds that extra bit of delicious flavor to these creamy-filled crunchy treats.

Fruit Squares
  • 1 12.35-oz (350-g) pkg Gefen Puff Pastry Squares
  • 4–5 cups assorted fruit of your choice
  • 1 egg, mixed with a splash of water
  • turbinado cane or granulated sugar, for sprinkling
Cheesecake Layer
  • 2 egg yolks
  • ⅔ cup sugar
  • 2 tsp Gefen Vanilla Sugar
  • 16 oz (450 g) cream cheese, room temperature
Tahini-Lime Drizzle (optional)
  • 4 Tbsp Mighty Sesame Tahini
  • 4 Tbsp Heaven & Earth Lime Juice
  • 4 Tbsp Gefen Confectioners’ Sugar

To make the cheesecake mixture, place all the ingredients in a medium bowl and mix until combined, with an immersion blender, if preferred.

Preheat oven to 400°F (200°C). Line two baking sheets with Gefen Parchment Paper and set aside.

Lay out puff pastry squares on the baking sheets. Spread cheesecake filling on the pastry, leaving about a 12-inch (1-cm) border (no need to be precise). Top with fruit. Brush with egg wash around the exterior of the square and sprinkle with sugar.
