Leftover Roast Chicken Soup!

Sauté 1 large diced onion + 4–5 cloves minced garlic. Add 3 diced carrots, ½ a diced celery root (or celery stalks), 2–3 small potatoes, 1 zucchini, ¼ cup large lima beans, a handful barley, and chopped leftover chicken. Cover with chicken broth and add salt and pepper. Let it simmer for a looonnng time. Skip or swap any ingredient. Except the onion. And the garlic. And the chicken. Yup, that’s it.

When I was a newlywed, everyone bought a set of T-fal nonstick pans for dairy. I had a miserable experience with them and ended up replacing my pots and pans shortly after. I was amused to find a recipe that I recently discovered featured in Last Licks. Over Chol Hamoed, I took out a bunch of old Family Table recipes that I’d saved over the years. I made these muffins, and I’ve used the recipe a few times since. Like the other contributor, I also tweaked it, but instead of juice, I used almond milk with no added sugar. It worked great also without any additions. B’teyavon!
