SERVES 10

Baked Wings

  • 4 pounds chicken wings
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black
  • pepper
  • ¼ tsp cayenne pepper
  • 2 teaspoons garlic powder

Beer Glaze

  • 2 cloves garlic
  • ¼ inch ginger, grated, or 2 frozen ginger cubes
  • ½ teaspoon pepper flakes
  • 1 cup stout beer
  • ½ cup honey
  • 1 Tablespoon Dijon mustard
  • 4 Tablespoons tomato paste

Preheat oven to 400°F. Line a baking sheet with parchment paper; set aside.

In a large bowl, toss together wings, salt, black pepper, cayenne pepper, and garlic powder.

Place wings in a single layer on prepared baking sheet. Bake for 45 minutes, turning once halfway through the baking time, until browned and crispy.
