Oatrageous Bars

  • 2½ cups old-fashioned oats
  • 1 cup whole wheat flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ⅔ cup dried fruit
  • ½ cup chocolate chips
  • ¾ cup brown sugar
  • ½ cup maple syrup
  • ½ cup nut butter
  • ¼ cup oil (or ⅛ cup oil and ⅛ cup applesauce)
  • 2 large egg whites or 1 extra-large egg

Preheat oven to 350°F (175°C). Mix all the ingredients together and spread into a lined 9×13-inch baking pan. Bake for 20 minutes or until golden.

Every time I make this recipe, I think how much we enjoy this oldie but goodie and need to reshare it!

* My mother used to make these bars when I was growing up. I make it now for my kids. I always double the recipe and put it on an entire sheet pan, then cut them into bars and freeze them. They taste even better frozen!

* I use Craisins for the dried fruit, ½ cup of brown sugar instead of ¾ cup, and natural peanut butter for the nut butter. I also sub 100 percent silan for the maple syrup.
