Chocolate Crumb Cake

RECIPE FROM DINING IN

Warning: It’s hard to stop noshing on this cake. Easy to bake, easy to eat!

SERVES 24

  • 4 cups flour
  • 2 cups sugar
  • 2 tsp vanilla extract
  • ¾ cup margarine
  • ½ cup + 4½ Tbsp oil
  • 4 eggs
  • 1 cup orange juice
  • pinch cinnamon
  • 4 tsp baking powder mixed with 3 tsp flour
  • 4½ Tbsp boiling water
  • 4½ Tbsp cocoa powder
  • 1½ cups confectioners’ sugar

Preheat oven to 350°F (175°C). Combine flour, sugar, vanilla, margarine, and ½ cup oil in a bowl and mix well. Remove 1½ cups of the mixture and set it aside to use for the topping. Then add the eggs, orange juice, cinnamon, and baking powder-flour mixture to the bowl and mix well. Pour the batter into a lined 11×17-inch (28×43-cm) pan. Combine 4½ Tbsp oil, boiling water, cocoa, and confectioners’ sugar and mix it gently into the batter. Sprinkle reserved topping over the entire cake. Bake for 45–60 minutes.
