While most people enjoy a juicy steak fresh off the grill, it would be nice to have a meat-free option or side dish to accentuate the flavorful barbecue experience. Grilling vegetables is an underestimated way to appreciate barbecuing, and this method of cooking contributes a unique flavor to our food. Enhancing fresh produce by grilling it is also an amazing way to encourage your family to eat their veggies. Playing on the barbecue theme, prep the veggies just as you would their meat counterparts — on skewers, or as a “steak,” like in this recipe. Go ahead and take your barbecue up a notch with these Grilled Turmeric Cauliflower Steaks.
SERVES 2–3
Slice the cauliflower head into “steaks.” In a small bowl, mix the oil, lemon juice, and spices. Brush on all sides of the cauliflower slices.
Heat a grill to medium heat (about 350°F/175°C). Place cauliflower steaks on the hot grill. Cover the grill and cook for 6 minutes or more, depending on thickness, until the bottom is beginning to char. Flip the cauliflower, then re-cover the grill and cook for an additional 6 minutes, until the cauliflower is tender.
Remove from the grill. Garnish with parsley, if desired.
